1. Classic Jollof Rice

Ingredients:

  • 2 cups long-grain parboiled rice
  • 1/4 cup vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup tomato paste
  • 2 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon ground ginger
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • 1 cup mixed vegetables (e.g., peas, carrots, corn)
  • Optional: cooked chicken or fish for added protein

Instructions:

  1. Prepare the Base: Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until translucent. Stir in the garlic and bell pepper, cooking for an additional 2 minutes.
  2. Create the Sauce: Add the diced tomatoes, tomato paste, thyme, paprika, ground ginger, curry powder, salt, and pepper. Stir well and let it simmer for about 10 minutes, allowing the flavors to meld.
  3. Cook the Rice: Add the rice to the pot, stirring to coat the rice with the tomato sauce. Pour in the chicken or vegetable broth and bring to a boil.
  4. Simmer: Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed. Stir in the mixed vegetables and cook for an additional 5 minutes. If using, add the cooked chicken or fish.
  5. Serve: Fluff the rice with a fork and serve hot.

Tip: For an extra burst of flavor, garnish with fresh herbs like parsley or cilantro before serving.


 

2. Nigerian Plantain Fritters (Dodo)

Ingredients:

  • 3 ripe plantains, peeled and sliced
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1 egg, beaten
  • 1/2 cup milk
  • Vegetable oil for frying

Instructions:

  1. Prepare the Batter: In a mixing bowl, combine the flour, sugar, salt, cinnamon, and baking powder. Add the beaten egg and milk, stirring until you have a smooth batter.
  2. Coat the Plantains: Dip each plantain slice into the batter, ensuring it is well coated.
  3. Fry: Heat the vegetable oil in a frying pan over medium heat. Fry the coated plantain slices in batches, turning occasionally until golden brown and crispy, about 3-4 minutes per side.
  4. Drain and Serve: Remove the fritters from the oil and drain on paper towels. Serve warm.

Tip: Enjoy these fritters as a snack or a side dish. They're great with a drizzle of honey or a sprinkle of powdered sugar.


3. Moroccan Chickpea Salad

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  1. Combine Ingredients: In a large bowl, mix together the chickpeas, cucumber, bell pepper, red onion, parsley, and mint.
  2. Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, ground cumin, salt, and pepper.
  3. Toss and Serve: Pour the dressing over the salad and toss to coat evenly. Serve immediately or refrigerate until ready to serve.

Tip: This salad is perfect as a light lunch or a refreshing side dish. It can be made ahead and stored in the refrigerator for up to 3 days.
